Mediterranean Chicken Skewers with Feta Dipping Sauce
Chicken marinated in lemon, oregano, and garlic then broiled or grilled and passed with an easy to make Feta dipping sauce. Serve with a Strawberry Balsamic Salad for a complete meal.
Mediterranean Chicken Skewers with Feta Dipping Sauce
Chicken
1 1/2 pounds boneless, skinless chicken breast halves, cut into 1-inch cubesMarinade
4 tablespoons fresh lemon juice
2 tablespoons olive oil
2 teaspoons crushed dried oregano
3 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepperFeta Dipping Sauce
4 oz feta cheese, crumbled
1/2 cup mayonnaise
2 teaspoons lemon juice
1/4 teaspoon fresh ground black pepperDirections
Place chicken in a non-metallic bowl or resealable plastic bag. Combine marinade ingredients in a small bowl; pour over chicken, and cover or close bag. Refrigerate 30 minutes, turning occasionally.Meanwhile, place all Feta Dipping Sauce ingredients in a medium bowl and stir until well combined. Cover and refrigerate until ready to use.
Thread marinated chicken on 8 bamboo skewers that have been soaked in water. Broil about 6 inches from heat, about 8 minutes or until chicken is no loner pink inside, turning halfway through cook time. Serve with Feta Dipping Sauce. 4 servings.
