Chile Maple Glazed Salmon
Salmon fillets seasoned with a smoky ancho chile spice rub and finished with a maple glaze. Deliciously sweet and spicy.
Chile Maple Glazed Salmon
Ingredients
4 (6-ounce) salmon fillets
1 teaspoon salt
2 teaspoons paprika
1 teaspoon chili powder
1 teaspoon ancho chile powder
1/2 teaspoon ground cumin
1/2 teaspoon brown sugar
1 teaspoon maple syrupDirections
Heat grill and lightly coat rack with oil or cooking spray.Season salmon fillets with salt. In small bowl, combine paprika, chili powder, ancho chile powder, cumin and sugar; mix well. Rub salmon fillets with seasoning mixture. Place salmon skin-side down on prepared grill 4 to 6 inches from heat. Cook 7 minutes. Drizzle each fillet with maple syrup; cook 1 minute or until fish flakes easily with fork or until desired degree of doneness. 4 servings.
TO BROIL: Preheat broiler and lightly coat broiler pan with oil. Season salmon as directed. Place salmon, skin-side down, on broiler pan; broil 4 to 6 inches from heat source, for 7 minutes. Drizzle each fillet with maple syrup; broil 1 minute or until fish flakes easily with fork.
TIP: Use spatula to separate the fish from its skin after grilling or broiling.
