Easy Chicken & Cannellini Bean Salad
A beautiful salad with great textures. Cannellini beans, chicken, tomato and basil, lightly coated in a Dijon dressing.
Chicken & Cannellini Bean Salad

2 cups coarse chopped cooked chicken
2 (16-ounce) cans cannellini beans, or other white beans, rinsed and drained
1 cup chopped tomato
1/2 cup thinly sliced red onion
1/3 cup sliced fresh basil leavesDressing
1/4 cup red wine vinegar
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
2 cloves garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepperDirections
Combine all salad ingredients in a large bowl; stir gently.In small bowl, whisk together all dressing ingredients until well combined; drizzle over salad, tossing gently to coat. 5 servings.
