Grilled Chicken with Dijon-Peach Glaze
Ingredients
1/2 cup peach preserves
3 tablespoons Dijon or coarse ground mustard
4 boneless, skinless chicken breast halvesDirections
Preheat grill and lightly coat rack with oil or cooking spray. Combine preserves and mustard in small bowl; blend well. Brush chicken with peach mixture; place on grill 4 to 6 inches from heat source. Grill chicken over medium heat 15 to 20 minutes or until chicken is fork tender and juices run clear (160°F on meat thermometer), turning occasionally and brushing frequently with peach mixture. 4 servings.TO BROIL: Prepare peach mixture as directed. Brush chicken with peach mixture; place on broiler pan. Broil 4 to 6 inches from heat source for 15 to 20 minutes or until chicken is fork tender and juices run clear (160°F on meat thermometer), turning occasionally and brushing frequently with peach mixture.
