Homemade Sun Dried Tomato Pesto
Whip up this flavorful pesto in minutes! Made with sun dried tomatoes, basil and Parmesan cheese. Toss with pasta for a delicious side dish or spread on Crostini for an appetizer.
Sun Dried Tomato Pesto
Ingredients
1 (8.5-ounce) jar sun-dried tomatoes packed in olive oil
2 cloves garlic
1/8 teaspoon red pepper flakes
1 cup fresh basil leaves
1/2 cup fresh grated Parmesan cheese
salt and pepper to tasteDirections
Combine sun-dried tomatoes with the oil, garlic, pepper flakes, and basil in a food processor, or blender with metal blade. Process or blend on high speed until tomatoes are finely chopped. Transfer mixture to a medium bowl; stir in cheese. Season to taste with salt and pepper. Store covered in refrigerator.
