Mixed Greens with Avocado, Grapes & Pecans
A nutritious and delicious salad with great textures tossed in a yogurt dressing. If you need a good source for grapes, try Costco. I’m not as sold on Costco as some of my friends are, but their grapes are fabulous! Always great fresh flavor and texture.
Mixed Green Salad with Avocado, Grapes & Pecans
Dressing
1/2 cup plain yogurt
1/4 cup apple juice
1 to 2 tablespoons sugar, to tasteSalad
5 cups mixed salad greens (leaf, iceberg, and bibb lettuces)
1 medium avocado, sliced or cubed
1 cup red or purple seedless grapes, halved
1/2 cup toasted pecan halves
2 tablespoons chopped green onionsDirections
Combine all dressing ingredients in small bowl; blend well. Refrigerate at least 2 hours to blend flavors.Just before serving time, combine all salad ingredients in large bowl; toss gently. Serve with prepared dressing. 6 servings.
