Old Fashioned Dishpan Cookies
Coconut, chopped nuts and oatmeal team up to make an old family favorite. Recipe courtesy of my mother-in-law, thank you Ann!
Dishpan Cookies
Ingredients
2-1/2 cups butter or margarine
2 cups sugar
2-1/2c.firmly packed brown sugar
4 eggs
2 teaspoons vanilla
4-1/2 cups flour
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 cups shredded coconut
2 cups chopped nuts
2 cups oatmeal
Directions
Heat oven to 375° F. In large bowl, cream together butter and sugars. Add eggs and vanilla; mix well. Add flour, baking powder, baking soda and salt; mix until well blended. Stir in coconut, nuts and oatmeal; mix well. For each cookie, drop about 2 tablespoons dough onto ungreased cookie sheet. Bake at 375° F. for 10 to 12 minutes or until golden brown.
