I thought that my recipe for Luscious Lemon Meringue Pie was easy, which you can find here, but then I found this recipe at Eagle Brand which is even easier. This was the first recipe I learned to make as a child. It was before the days of pre-made graham cracker pie crusts or packaged graham cracker crumbs, so I had to beat my graham crackers to a pulp with a rolling pin! At only 12 years old I was so pleased with my self to make such a beautiful and delicious pie. The pie filling is creamy and tart, and was easy to make with Eagle Brand sweetened condensed milk. All these years later it’s still one of my favorite pies. (more…)
