Quick Chicken & Corn Chowder
Ingredients
1-1/2 cups cubed cooked chicken
1 (12-ounce) can Mexican-style corn with peppers, drained
1 (8.25-ounce) can sliced carrots, drained
1 (10-3/4 ounce) can condensed cream of potato soup
4 ounces shredded American Cheese
2 cups milk
1 tablespoon dried minced onion, or 1/3 cup fresh chopped onion
1 chicken flavor bouillon cube or 1 teaspoon chicken flavor instant bouillon
1/2 teaspoon celery seedDirections
Combine all ingredients in large saucepan. Cook over low heat 5 to 8 minutes or until thoroughly heated and cheese is melted, stirring occasionally. 5 cups.Similar Recipe: Instant Potato & Corn Chowder

Look how simple! Ashley, you may want to consider adding a can of chopped green chiles, since I know you like a little spice. It would make it more of a Mexican-style Chicken & Corn Chowder.

Ok Mom, so Ashley made this a couple nights ago and ever since all Addy is asking for is “soup”. Despite her two year old pickiness she wants nothing but Corn Chowder now, vegetables and all, it is definitely the new favorite.
