Bacon Potato Soup
This is an easy “prep it and forget it” recipe that is guaranteed not to disappoint.
Bacon Potato Soup
Ingredients
6-8 large baking potatoes
8 slices regular bacon
1 medium onion, chopped
1 quart half and half
Directions
Scrub potatoes under running water; peel. Once peeled, rinse potato to wash off any remaining dirt. Cut potatoes into 1-inch cubes and place in large pot. Fill pot with water about an inch above tops of potatoes. Bring water to a boil and cook until potatoes are tender (about 8-10 minutes); drain water and set aside.
Meanwhile, slice bacon into 1/2 inch pieces and combine with onion in large skillet. Cook bacon and onion on medium heat until the bacon is brown (yet still limp) and most of the fat has been rendered. DO NOT DRAIN FAT.
Pour half and half over potatoes. Combine bacon and onion mixture with the potatoes and half and half. Simmer on low heat for about 30 minutes to combine flavors. Salt and pepper to taste.
Serve and enjoy.
