Oatmeal Raisin Pancakes
Ingredients
1/2 cup quick-cooking rolled oats
2 cups water
2 cups pancake mix
2 tablespoons sugar
1/2 teaspoon cinnamon
1/2 cup raisinsDirections
Heat large skillet or griddle to 375°F. Lightly grease with oil.Combine oats and water in medium bowl; let stand 5 minutes. Add remaining ingredients; stir just until moistened and large lumps disappear. For each pancake, pour about 1/4 cup batter onto hot skillet. Bake until bubbles form and edges start to dry; flip pancake and bake an additional 1-1/2 to 2 minutes or until golden brown. 14 to 16 pancakes.
