Quick & Easy Dessert Crepes
The batter for these crepes is easy to prepare with the use of pancake mix. Fill with ice cream and drizzle with your favorite dessert sauce or fruit topping for an elegant dessert.

Ingredients
1 cup pancake mix
1 cup water
2 eggs
2 tablespoons sugarDirections
Heat 8-inch skillet. Lightly grease with oil.Combine all ingredients in small bowl; beat together until batter is smooth. Pour 2 tablespoons batter into hot skillet, immediately tilting pan until batter covers bottom. Cook until edges start to dry and center is set. If desired, turn to brown other side. Fill with desired filling; roll up. 9 to 12 crepes.
