Pan Seared Chicken with Fresh Tomato-Basil Relish
A simple and succulent week night meal that is elegant enough to serve up to guests when entertaining. Take advantage of the variety of fresh cherry tomatoes in season, such as yellow pear, sweet 100’s, and heirloom. Using a variety of tomatoes will make for a colorful relish.
Pan Seared Chicken with Fresh Tomato-Basil Relish
Tomato Basil Relish
2 pints cherry tomatoes, halved
1 medium Walla Walla sweet onion, quartered and thinly sliced
2 tablespoons chopped fresh basil
1/4 cup Extra Virgin Olive oil
1/4 to 1/2 teaspoon salt, to tasteChicken
6 boneless chicken breasts with wing segment attached (’Airline’ chicken)
1/2 teaspoon salt
1/2 teaspoon pepper
4 tablespoons Canola oilDirections
Combine all relish ingredients in a medium bowl. Set aside.*Heat oven to 375°F. Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat until hot. Add chicken breasts, skin-side down; cook 1 to 2 minutes or until skin is golden brown. Transfer chicken, skin-side up, to large baking sheet. Bake at 375°F. for 8 minutes or until chicken is fork tender and no longer pink inside (160°F. on meat thermometer).
To serve, place chicken breast on individual serving plates, top with relish. 6 servings.
