Summer Fun: Watermelon Shaped Ice Cream
My son reminded me of this fun ice cream treat that I would serve in the summer, sherbet and ice cream assembled in the shape of a watermelon. Lime sherbet forms the outer rind, raspberry sherbet and mini chocolate chips are combined to resemble the watermelon and seeds. Slice into this treat just as you would a watermelon, and serve up some fun!
Watermelon Shaped Ice Cream
Ingredients
1 quart lime sherbet, slightly softened
1 cup vanilla ice cream, slightly softened
1 quart raspberry sherbet, softened
1/2 cup mini chocolate chipsDirections
To create the watermelon rind, spoon lime sherbet in the bottom and up the sides of a 2-quart bowl, pressing with the back of a spoon to form a smooth even layer. Freeze for 20 minutes or until firm. Spread vanilla ice cream over lime sherbet layer, smoothing with back of spoon to cover completely. Return to freezer; freeze 20 minutes or until firm.To create watermelon and seeds, combine raspberry sherbet and chocolate chips in large bowl; mix well. Spoon mixture into center of bowl containing the prepared watermelon rind, filling remaining space in center of bowl. Smooth top with the back of spoon or knife; cover with plastic wrap. Freeze 6 hours or up to 1 week.
To serve, remove prepared mold from freezer and let stand a room temperature a few minutes to slightly soften. Remove plastic wrap and place serving platter over top of bowl; invert onto platter. Cut into wedges and serve immediately. 8 servings.
