Warm New Potato Salad with Walnut Vinaigrette
A colorful salad with a delicious nutty flavor. Made with warm new potatoes, tomatoes, red onions and walnuts.
Warm New Potato Salad with Walnut Vinaigrette
Salad
8 small new potatoes
3 cups water
2 medium tomatoes, cut into wedges
1/2 red onion, sliced
1/4 cup green onions
1/4 cup walnut piecesVinaigrette
1/4 cup vegetable oil
3 tablespoons walnut oil, or olive oil
2 tablespoons cider vinegar
2 tablespoons finely chopped fresh tarragon
1/4 teaspoon salt
1/8 teaspoon pepperDirections
Combine potatoes and water in medium saucepan. Bring to a boil; reduce heat. Cover; simmer 10 to 15 minutes or until tender. Drain; cool slightly.Meanwhile, combine tomatoes, red onion, green onions, and walnuts in a large bowl; toss gently. In a small bowl, whisk together all vinaigrette ingredients; pour over tomato mixture, and toss to coat. Cut warm potatoes into quarters. Add to tomato mixture; toss gently to coat. Serve immediately. 8 servings.
