Maple-Bourbon Grilled Chicken
Glaze
1/3 cup bourbon
2 tablespoons maple syrup
1 tablespoon Dijon country-style mustardChicken
2 tablespoons oil
3 large cloves garlic, minced
2 teaspoons Kosher salt
2 (3 to 3-1/2 pound) packages cut-up frying chicken
1/2 teaspoon pepperDirections
Combine all glaze ingredients in a small bowl; mix well.Preheat gas or charcoal grill, and lightly coat rack with oil or cooking spray.
Combine oil, garlic, salt, and pepper in a small bowl; brush evenly over chicken until well coated. Place chicken, skin side up, on gas grill over low heat or on charcoal grill 4 to 6-inches from medium coals. Cook 30 to 40 minutes or until chicken is fork-tender and juices run clear (160° F. on meat thermometer), turning frequently and brushing with glaze during last 20 minutes of cooking time. 6 servings.
