Marinated Shrimp & Avocado Salad
A delicious light salad made with marinated shrimp, avocado slices and black olives. Serve as an elegant first course or with a rustic loaf of country bread for a light meal.
Marinated Shrimp & Avocado Salad
Ingredients
1/4 cup oil
1/4 cup white wine vinegar
2 tablespoons sliced green onions
1 tablespoon finely chopped fresh parsley
4 cloves garlic, minced
1/4 teaspoon celery salt
6 drops hot pepper sauce, to taste
12 to 20 cooked large shrimp
8 to 12 pitted ripe black olives
2 cups shredded lettuce
1 avocado, peeled, pitted and slicedDirections
Combine oil, vinegar, onions, parsley, garlic, celery salt and hot pepper sauce in small bowl; whisk together until well blended. Add shrimp and olives. Cover; refrigerate 6 to 8 hours to blend flavors.To serve, arrange lettuce on serving plates, top with equal portions of shrimp, olives, and avocado slices. 4 servings.
