Marinated Tomato Slices
I had never been a big fan of tomatoes until I had my first home-grown vine picked tomato from the garden. I couldn’t believe the difference in flavor over store bought tomatoes, simply delicious! This quick and easy to prepare recipe takes advantage of summer’s vine ripened red jewel.
Marinated Tomato Slices
Vinaigrette
1/2 cup oil
1/3 cup vinegar
1 tablespoon white wine Worcestershire sauce
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon white pepperSalad
3 medium tomatoes, thinly sliced
1 small onion, thinly sliced and separated into rings
1 tablespoon chopped fresh basil leavesDirections
Combine all dressing ingredients in small bowl; whisk together until well blended. Set aside.Layer tomato slices and onions in shallow baking dish. Sprinkle with basil. Pour prepared dressing over tomatoes and onions. Cover and refrigerate 2 to 6 hours to blend flavors, occasionally spooning dressing over top of slices. 8 servings.
Serving Suggestions: Serve as an accompaniment to chicken, or atop leaf lettuce as a salad.
