Melon-Berry Fruit Salsa
This recipe takes advantage of summer’s seasonal fruit - made with cantaloupe, peaches, blackberries, lime juice, and a little jalapeno to give it some zip! Team it up with grilled shrimp or fish for a winning combination.
Melon-Berry Fruit Salsa
Ingredients
2 cups small diced cantaloupe
2 cups small diced peaches
1 pint fresh blackberries, washed and hulled
1 cup small diced red onions
1 large fresh jalapeno, seeded and diced
1/4 cup loosely packed chopped fresh cilantro leaves
6 tablespoons fresh lime juice
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepperDirections
In a large bowl, combine cantaloupe, peaches, blackberries, onion, jalapeno, and cilantro; toss gently to combine. Add lime juice and olive oil; mix well. Season to taste with salt and pepper. Refrigerate until ready to serve. 12 servings.Similar Recipes:
