Moist & Delicious Chocolate Zucchini Bread
Zucchini not only makes this chocolate quick bread moist, it adds nutrition too!
Chocolate Zucchini Bread
Ingredients
2 (1-ounce) squares unsweetened chocolate
3 eggs
2 cups sugar
1 cup vegetable oil
2 cups grated zucchini
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3/4 cup semisweet chocolate chipsDirections
Preheat oven to 350° F. Lightly grease two 9×5-inch loaf pansPlace chocolate squares in microwave-safe bowl; microwave on HIGH power for 1 minute; stir. If needed, continue microwaving at 30 second intervals, stirring until smooth.*
In large bowl, combine eggs, sugar, and oil; mix well. Add zucchini, vanilla, and melted chocolate; stir until well combined. Stir in flour, baking soda, salt, and cinnamon; blend well. Fold in chocolate chips. Pour batter into prepared pans.
Bake in 350° F. oven for 50 to 60 minutes or until toothpick inserted in center of loaf comes out clean.
*All microwaves differ in timing and heating patterns, check chocolate at 30 second intervals to avoid scorching. Chocolate may appear formed and unmelted after heating, but will become fluid after stirring.
