Pesto Marinated Flank Steak with Chunky Blue Cheese
Ingredients
1 (1-1/2 pound} flank steak, or top round steak
1/2 teaspoon salt
1/2 teaspoon pepper
1 (6.7-ounce) jar pesto
1/3 cup bottled chunky blue cheese dressingDirections
Season flank steak with salt and pepper. Spoon and spread pesto over steak, coating all sides; place in large resealable plastic bag. Seal bag. Let stand at room temperature for 30 minutes.Preheat gas or charcoal grill and lightly coat grate with oil.
Remove steak from bag. Place steak on preheated grill 4 to 6 inches from medium heat, or medium hot ash covered coals. Grill, uncovered, about 6 minutes per side for medium rare doneness. Remove from grill. Loosely cover steak with foil; let rest 1o minutes. Carve across the grain into thin slices. Place steak slices on individual serving plates or serving platter; drizzle with blue cheese dressing. Garnish with blue cheese crumbles and basil leaves if desired. 4 servings.
