Prosciutto Chicken Linguine with Fresh Tomato Herb Sauce
Chicken and proscuitto combine with fresh tomatoes, basil, garlic and roasted red peppers for a delicious main course meal.
Prosciutto Chicken Linguine with Fresh Tomato Herb Sauce
Ingredients
1 (12-ounce) package uncooked linguine
2 tablespoons olive oil
4 boneless, skinless, chicken breast halves (about 1 pound), cut into 1-inch pieces
3 cloves garlic, minced
5 tomatoes, seeded and chopped
4 ounces prosciutto, cut into small pieces
1/2 cup fresh basil, sliced into small strips
2 tablespoons butter
2 whole roasted red peppers from a jar, drained and cut into strips
1/2 cup freshly grated Parmesan or Romano cheeseDirections
Cook pasta according to package directions; drain.Meanwhile, in large skillet , heat oil over medium-high heat until hot. Add chicken, cook 4 to 5 minutes, stirring occasionally, until chicken turns white. Stir in garlic; cook 1 minute. Add tomatoes, prosciutto, basil and butter. Reduce heat to medium-low; cook 10 minutes, stirring occasionally, or until mixture is heated through. Stir in peppers, and cheese. Add cooked linguine; toss to coat. Cook 1 minute, stirring constantly, until linguine is thoroughly heated. Transfer mixture to large serving platter. Garnish with additional cheese and fresh basil leaves if desired. 5 servings.
