Blueberry Lemon Parfaits
Ingredients
2 cups fresh blueberries
2 tablespoons sugar
1-1/4 cups milk
1 (8-ounce) container lemon yogurt
1 (3-3/4 ounce) package instant vanilla pudding and pie filling mix
1/2 cup whipping cream, whipped, if desiredDirections
Place blueberries in medium bowl; sprinkle with sugar. Set asideIn medium bowl, combine milk, yogurt and pudding mix. Beat 2 minutes at low speed or until slightly thickened. Spoon alternate layers of pudding and blueberries in parfait glasses or dessert dishes, ending with blueberries. Refrigerate until serving time. Serve topped with whipped cream and a light sprinkle of nutmeg if desired. 6 servings.
