Homemade Roasted Red Pepper Hummus
Homemade hummus not only tastes better, it’s also easier on your budget. Team up this Middle Eastern dip with Pita chips for a healthy snack or appetizer.
Homemade Roasted Red Pepper Hummus
Ingredients
1 15-ounce can garbanzo beans or chick-peas, drained and rinsed
1/3 cup tahini
1/3 cup fresh squeezed lemon juice
1 tablespoon olive oil
2 large cloves garlic, minced
1/4 teaspoon salt
1/2 cup chopped roasted red peppersDirections
Combine beans, tahini, lemon juice, olive oil, garlic and salt in a food processor or blender with metal blade; process or blend until smooth. Add peppers; process until peppers are finely chopped. If mixture is too thick, add 1 to 2 tablespoons water and continue to blend until mixture is smooth. Transfer to a serving dish. Garnish with additional chopped roasted red peppers and a drizzle of olive oil. Serve with pita chips.NOTE: Tahini is a sesame seed paste found in most grocery stores.
