Marinated Grilled Shrimp Salad
A lively lime and orange spiced marinade doubles as the dressing in this grilled shrimp salad served with fresh Spring salad greens and mango slices
Marinated Grilled Shrimp Salad
Ingredients
3/4 cup fresh lime juice
1/2 cup orange marmalade
1 tablespoon minced garlic
1/4 cup chopped cilantro leaves
1/2 cup olive oil
4 teaspoons soy sauce
1/2 teaspoon red pepper flakes
1 pound (about 16) large shrimp , shelled and deveined
4 wooden skewers
4 cups Spring mix salad greens
2 ripe mangos, peeled pitted and slicedDirections
Combine lime juice, marmalade, garlic, cilantro, 7 tablespoons olive oil , soy sauce, and pepper flakes in a medium non-metal bowl; whisk until well combined. Reserve 1/2 cup mixture; refrigerate. Add shrimp to remaining mixture in bowl; toss until shrimp are thoroughly coated. Refrigerate 30 minutes, stirring occasionally.Place the skewers in a shallow tray and cover with hot water. Set aside.
Preheat a grill or broiler to medium heat.
Thread shrimp on to the soaked wooden skewers. Lightly pat dry with paper towels; brush with remaining olive oil. Grill for about 2 to 3 minutes on each side, or until shrimp are golden brown on both sides and cooked through.
To serve, place greens on individual serving plates. Top with mango slices and shrimp; drizzle with reserved dressing. Garnish with cilantro sprigs if desired.
