Pan Grilled Sweet Potatoes

No need to wait for Thanksgiving to enjoy sweet potatoes.  Try serving up these cumin-spiced ‘chips’ with hamburgers, pork tenderloin or chicken.  A nice alternative to french fries, and an excellent source of vitamin A.

Pan Grilled Sweet Potatoes

Ingredients
3/4 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1 tablespoon olive oil
1 pound peeled sweet potatoes, cut into 1/4-inch thick slices
2 tablespoons chopped fresh cilantro

Directions
In small bowl, combine cumin, garlic powder, salt and pepper.  Set aside.

Place sweet potatoes in large bowl.  Drizzle with oil; toss to coat. Heat large grill pan over medium heat.  Coat pan with cooking spray.  Add potatoes, cook 10 minutes or until tender, turning occasionally.  Transfer potatoes to large bowl.  Sprinkle with cilantro and  cumin mixture; toss gently to coat.  4 servings.

Ham & Peach Summer Salad

A colorful main dish salad that takes advantage of Summer’s seasonal fruit.  Made with fresh salad greens, ham, peaches and blueberries then topped with a homemade creamy peach dressing.

Ham & Peach Summer Salad

Dressing
1 peach or nectarine, peeled and sliced
3 tablespoons orange juice
1/2 cup whipping cream, whipped

Salad
3 cups torn salad greens
2 cups cubed cooked ham
2 medium peaches or nectarines, peeled and sliced
1-1/2 cups fresh blueberries
3/4 cup chopped celery

Directions
Place 1 sliced peach and orange juice in blender container.  Cover; blend until smooth.  Transfer mixture to medium bowl; fold in whipped cream; refrigerate.

To assemble salad, place greens on serving platter or individual serving plates.  Arrange ham, peaches, blueberries and celery over greens.  Serve with prepared dressing.  4 servings.

Homemade barbecue sauces are easy to prepare and provide original flavor that can’t be found in bottled sauces.

Honey-Mustard Rib Sauce

Ingredients
1 cup honey
1 cup vinegar
2/3 cup prepared Dijon mustard
1/2 cup chopped onion
2 cloves garlic, minced
2 teaspoons celery salt
1 teaspoon paprika

Directions
Combine all ingredients in medium saucepan.  Bring to a boil, stirring frequently.  Remove from heat.  Baste ribs frequently with sauce during last 20 to 30 minutes of cook time. Makes approx. 2-1/3 cups.

Creamy Fruit Salad

A cool and creamy fruit salad made with pudding and whipped topping.  Delicious served as a side salad or dessert.

Creamy Fruit Salad

Ingredients
1 (4-ounce) container vanilla pudding
1/2 cup frozen whipped topping, thawed
1 cup seedless green grapes, halved
1 cup miniature marshmallows
1 (8-ounce) can pineapple tidbits, drained
1 cup sliced, fresh strawberries

Directions
Combine pudding and whipped topping in medium bowl; mix well.  Add grapes, marshmallows and pineapple; stir gently to combine.  Fold in strawberries.  Serve immediately.  8 servings.

Ingredients
1-1/2 pounds thinly sliced deli roast beef, shredded or cut into strips
1 (18-ounce) bottle barbecue sauce
8 onion sandwich buns

Directions
Combine roast beef and barbecue sauce in medium saucepan.  Cook over medium heat 15 minutes to blend flavors, stirring occasionally.  Serve in buns.  8 sandwiches.
