Whole Wheat Zucchini Coffee Cake
Topping
1 tablespoon sugar
1/2 teaspoon cinnamonCake
1-3/4 cups whole wheat flour
1 cup sugar
1/2 cup chopped nuts, if desired
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups shredded zucchini
1/2 cup buttermilk*
1/4 cup orange juice
1/4 cup oil
1 teaspoon vanilla
1 eggMicrowave Directions
Grease 12-cup microwave-safe tube pan. In small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon; coat inside of greased pan with cinnamon mixture.In large bowl, combine all cake ingredients. Blend at low speed until moistened; beat 2 minutes at medium speed. Pour into prepared pan.
Microwave on HIGH for 10 to 14 minutes, or until toothpick inserted in center comes out clean, rotating pan 1/4 turn every 4 minutes. Cool in pan for 2 minutes. Invert onto serving plate. Store in refrigerator. 6 to 8 servings.
*TIP: To substitute buttermilk, use 1-1/2 teaspoons vinegar or lemon juice plus milk to make 1/2 cup. Let stand 5 minutes.Similar Recipe:
