Summer Fun: Watermelon Shaped Ice Cream

My son reminded me of this fun ice cream treat that I would serve in the summer, sherbet and ice cream assembled in the shape of a watermelon. Lime sherbet forms the outer rind, raspberry sherbet and mini chocolate chips are combined to resemble the watermelon and seeds. I thought that my recipe for Luscious Lemon Meringue Pie was easy, which you can find here, but then I found this recipe at Eagle Brand which is even easier. The same filling as the Lemon Meringue Pie, made with sweetened condensed milk, but the meringue has been replaced with whipped topping. Easy, creamy, and deliciously tart and sweet. (more…)

This was the first recipe I learned to make as a child. It was before the days of pre-made graham cracker pie crusts or packaged graham cracker crumbs, so I had to beat my graham crackers to a pulp with a rolling pin! At only 12 years old I was so pleased with my self to make such a beautiful and delicious pie. The pie filling is creamy and tart, and was easy to make with Eagle Brand sweetened condensed milk.
