I love the combination of flavors in this recipe, especially how smoking the rosemary on the grill infuses the chicken. About 20 years ago I lived in a town where it seemed everyone entered the County Fair. I had never entered a Fair before, and was urged by my friends to do so. Giving in to peer pressure, I decided I would try a Carrot Cake recipe I found in Pillsbury Classic #69 Simply From Scratch recipe booklet (1986). It turned out to be a good choice, as it won the Grand Prize Ribbon in its category. I never looked for another Carrot Cake recipe again, this one is a clear winner, and surprisingly easy to make. This is one of my winning recipes for ‘Gold Kist Farms Chicken Winning Taste Recipe Contest.’ The addition of Parmesan cheese and Cajun seasoning gave a different twist to your traditional fried chicken. If you don’t have time to fry up the chicken, consider just making the Aioli to serve with prepared chicken strips for a change of pace. (more…)

This was my first winning recipe which I submitted to the ‘Campbell’s Soup 20 minute Recipe Challenge.’ The idea was to make an original recipe that could be prepared and cooked in 20 minutes or less. I served it with cornbread, but for a variation you could easily substitute pasta or rice for a great dinner in minutes. (more…)
